What Are Dark Chocolate Covered Cacao Nibs?

When you’re shopping for chocolate-covered cacao nibs with food allergies in mind, most commercial options use dairy-containing dark chocolate coatings or are produced in facilities that handle tree nuts and dairy on shared equipment. Gerbs Dark Chocolate Covered Cacao Nibs (55%) are produced in our dedicated allergen-free facility in Johnston, Rhode Island, free from the 14 most common allergens including dairy and soy, on dedicated equipment with no co-packers.

The product combines two distinct flavor experiences: a 55% dark chocolate exterior, lightly sweet, with the characteristic bittersweet note of quality dark chocolate, and a roasted cacao nib center that is intensely bitter and crunchy. The contrast between the two layers is intentional and pronounced. This is not a gentle snack; it is a bold, sophisticated confection for people who genuinely love dark chocolate and cacao.

Unlike chocolate chips, which deliver sweetness, or plain cacao nibs, which deliver only bitterness, these covered nibs land somewhere in between: the dark chocolate coating moderates the intensity of the nib just enough to make them snackable while preserving the complex, roasted character that makes cacao nibs worth eating. They work as a premium snack, a granola mix-in, a trail mix component, or a topping for oatmeal and yogurt alternatives.

The Gerbs Guarantee means the entire product, cacao nibs and chocolate coating alike, is processed in our Johnston facility by trained staff under the same allergen-free standard applied to every Gerbs product.

Dark Chocolate Covered Cacao Nibs are roasted cacao nibs enrobed in 55% dark chocolate, a two-ingredient confection that layers the lightly sweet, bittersweet character of quality dark chocolate over the intensely bitter, crunchy texture of a whole roasted cacao nib. The result is a product with more complexity than either ingredient alone: the chocolate coating softens the raw intensity of the nib without eliminating it, producing a snack that is simultaneously sweet, bitter, crunchy, and deeply chocolate-forward.

Gerbs Dark Chocolate Covered Cacao Nibs are produced in our dedicated allergen-free facility in Johnston, Rhode Island. Both the nibs and the 55% dark chocolate coating are free from dairy and soy, the two allergens most commonly found in commercially available chocolate-covered products. Free from all 14 major allergens. No co-packers. No shared equipment with dairy or tree nut products.

Key Health Benefits

Cacao Flavanols

Both the cacao nib core and the 55% dark chocolate coating are meaningful sources of cacao flavanols, polyphenol antioxidants studied for their antioxidant activity in the body. The flavanol content is lower than plain nibs due to the chocolate coating, but still higher than most commercial chocolate snacks.

Iron

The combination of cacao nibs and dark chocolate coating provides a meaningful source of iron per ounce, supporting hemoglobin production and oxygen transport, per NIH guidance. Particularly relevant for plant-based diets where iron-dense whole food sources are valuable.

Magnesium

Cacao is one of the most magnesium-dense foods available. Both the nib and the dark chocolate exterior contribute magnesium per serving, supporting the over 300 enzymatic reactions in which magnesium plays a role, per the NIH Office of Dietary Supplements.

Dairy-Free Dark Chocolate Snack

Chocolate-covered snacks, whether nuts, dried fruit, or nibs, almost universally use dairy-containing chocolate coatings. Gerbs Dark Chocolate Covered Cacao Nibs are coated in genuine dairy-free, soy-free dark chocolate, making them a premium snack option for dairy-allergic households that want the experience of a chocolate-coated confection without the allergen risk.

As with all foods, individual results may vary. Gerbs makes no medical claims.

Flavor & Texture Profile

The covered nibs deliver a layered flavor experience: the 55% dark chocolate exterior provides a lightly sweet, bittersweet chocolate note that softens the entry, followed immediately by the intense, bitter crunch of the roasted nib at the center. The two components are distinct and contrasting, sweet-bitter, smooth-crunchy, rather than blended. The overall impression is sophisticated and bold, landing well outside the range of conventional chocolate-covered snacks.

Ingredients

Dark Chocolate (Cacao Mass, Cane Sugar, Cacao Butter), Roasted Cacao Nibs. Contains: Cacao.

How to Use Dark Chocolate Covered Cacao Nibs

Snacking

Dark Chocolate Covered Cacao Nibs are most commonly eaten as a standalone snack. A small handful (about 1 oz) delivers an intense, layered chocolate experience, the dark chocolate coating provides initial sweetness followed immediately by the bitter, crunchy nib. They are self-contained in a way that plain nibs are not, making them more accessible for people new to cacao nibs while still delivering the complexity that dark chocolate enthusiasts appreciate.

Topping for Oatmeal and Grain Bowls

Scatter a tablespoon of covered nibs over a warm oatmeal bowl or grain bowl as a finishing topping. The chocolate coating softens slightly from the heat while the nib core retains its crunch. Pairs well with Gerbs rolled oats, fresh fruit, and a drizzle of maple syrup.

Trail Mix Component

Add covered cacao nibs to allergen-free trail mix as the chocolate component. Unlike chocolate chips, which melt or stick in warm conditions, covered nibs hold their shape better at room temperature and provide a more defined flavor and texture experience within the mix.

Granola Mix-In

Stir covered cacao nibs into finished granola (not during baking, the chocolate coating will melt in the oven). Add after the granola has cooled completely. They add visual appeal and a premium chocolate element to homemade allergen-free granola.

Storage

Store cacao nibs and covered cacao nibs in an airtight container in a cool, dry location. Cacao nibs have a long shelf life due to their low moisture content, properly stored, they maintain quality for 12-18 months. For covered cacao nibs, keep away from heat above 70°F to prevent the chocolate coating from blooming or melting. Do not refrigerate covered nibs during regular use, the temperature change causes condensation. For long-term storage, freeze nibs in a sealed bag; they can be used directly from frozen.

FAQ

What are cacao nibs?

Cacao nibs are crushed pieces of the roasted cacao bean before any sugar or dairy is added, the fundamental ingredient from which all chocolate is made, in its most whole form. They are intensely bitter and crunchy with no sweetness. In the covered nib product, the roasted nib is the inner core enrobed in 55% dark chocolate.

Are the chocolate-covered cacao nibs the same as chocolate chips?

No. Chocolate chips are formulated for baking, uniform, sweeter, and designed to hold shape and melt predictably. Covered cacao nibs are a confection: irregular, with a bitter nib center inside a dark chocolate exterior. The flavor and texture contrast within a single piece is the defining characteristic. They are a snack and topping, not a baking chip.

Do they contain dairy?

No. Both the cacao nib core and the 55% dark chocolate coating are dairy-free. Gerbs Dark Chocolate Covered Cacao Nibs are processed in a dedicated allergen-free facility in Johnston, Rhode Island, free from all 14 major allergens including milk and dairy.

How sweet are they?

The 55% dark chocolate coating provides a moderate sweetness, lightly sweet, with the bittersweet character of quality dark chocolate. The overall product is less sweet than a chocolate-covered raisin or almond but noticeably sweeter than plain cacao nibs. The bitter nib center comes through clearly after the initial sweetness of the coating. People who enjoy 70-80% dark chocolate will find the sweetness level appropriate.

Are they processed in a gluten-free facility?

Yes. All Gerbs products are processed in our dedicated allergen-free facility in Johnston, Rhode Island, free from all 14 major allergens including gluten, wheat, dairy, and soy. No co-packers. No shared equipment.

Alpha Gal is the nasty culprit that changed my eating habits last summer. It is from the Lone Star Tick , and makes you highly allergic to anything that comes from a Mammal. Hence no dairy or red meat. I love dark chocolate! The darker the better. Was shocked that I could not find any that didn’t include dairy. Yours doesn’t! Thank you so much!
